Crockpot 'young' Chicken & Roasted Potatoes

CROCKPOT 'young' chicken & Roasted Potatoes.

First combine spices in a bowl for the rub.
  • 3 tsp salt
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • I LOVE SPADE RANCH chicken seasoning so I added that to my rub


Clean your chicken and remove giblets and neck.  Rub spice mixture all over the chicken.  At this point you can seal it in a bag and let marinate over night. (which I did)  But if you don’t have the time you can skip this. Dice up 1/2 onion and put at the bottom of the crock pot.  Place spiced chicken on top of onions.  There is no need to add any liquid.  As your chicken slow cooks you will be amazed on how much juice you will end up with.


Slow cook on low for about 8 hrs.  You can use a thermometer to check to see if your chicken is done.  It should read 180 deg.  Or even simpler, wiggle a leg and if it’s loose, it’s done!


Roasted Potatoes, Cut up 3 small potatoes, bought the store bought "Roasted Potato" seasoning packet... added some Lowerys Season Salt, brushed the potatoes with some olive oil and. Roasted for 20-30min at 375 degrees in the oven.

Im MARRIED.

I have found some motivation and time to get on here really quickly and blog about the 2nd most exciting day of my life, my wedding.
Nick and I were married November 10th 2012, @ 3:00pm in Oxnard California.
We were united together under two HUGE Yarn-bombed trees, with our closest family and friends witnessing us become one.  The day before at our rehearsal dinner I was a mess, not because of the surreal feeling of marrying Nick, but because the day before it rained, and the day of our rehearsal we experienced 25 mph winds... thinking about all the hard work that had been poured into this wedding being ruined by mother nature made me feel sick! I woke up the morning of my wedding, feeling nothing but anxiety, is my hair gonna look good, I hope I don't have "too" much makeup on, I hope everyone makes it on time, I hope there isn't 50 mph winds..... As I was getting ready in our beach front suite I saw my future husband through the shutters of our window walking down the beach with his best man... I couldn't help but stop thinking about the annoying things that "could" go wrong, but started thinking about the amazing thing that "WAS" going to be happening. I am about to walk down an aisle with my dad who's my best friend, and raised me to be the strong, happy woman I am, stand hand in hand with a man whom I LOVE and adore dearly for countless reasons, and sometimes no reason at all, I just look at him and love him! The feeling of knowing my life is in its "right" place, I can not begin to explain it. Knowing that since I had Pella and all that I had went through, the amount of pain, tears, and support I reached out for was just a stepping stone into something GREAT, something REAL, and something I am so happy to look forward too.
So with that said heres our a preview of our RUSTIC, COLORFUL BARN WEDDING!




















OUR VOWS

The substance of which it is composed is a symbol of purity, which shall ever characterize your mind and hearts in all your relationships together."
