Paleo Meatloaf & Cauliflower Mash recipe

For the next month or at least up until the wedding I am doing the Paleo Diet.
for those of you who dont know what that is, its called the "caveman diet"
you can learn more about it here. 

Tonight was my first Paleo recipe attempt, and it turned out REALLY good!

Heavenly Meatloaf

Ingredients
2 1/2 lbs ground beef
1 lb ground pork
2T coconut flour
1c diced white onion
8 cloves minced garlic
1/2c red bell pepper - diced
3/4c red sauce (1/2 c mixed in, 1/4c reserved for top) *directions for sauce below
1 egg -beaten
1t salt
 * I also added Broccoli
 
Before
1/4t pepper

*Directions for Sauce:
 Mix:
6oz can tomato paste
3T vinegar
1/4t dried mustard
1/3c water
1/2t salt
1/4t cayenne pepper
1/2T garlic powder
squirt of lemon
 

Instructions
Combine all ingredients in bowl except 1/4c red sauce. Mix well. Shape into oiled loaf pans. Top with remaining red sauce. Bake at 350 for 1 hr 30 min.

Mashed Cauliflower 

Ingredients
- 1 head cauliflower, leaves removed, stem and florets chopped into similar sized pieces
- 1 cup chicken stock or broth (more for a particularly large head of cauliflower)
- 1/4 teaspoon black pepper
- 2 cloves garlic, smashed
- 1-2 teaspoons fresh rosemary leaves

Instructions
1. Place all ingredients in a medium sized saucepan or Dutch oven and bring to a boil.
2. Reduce heat to medium and cover, allowing to cook for 15-20 minutes or so, or until the cauliflower is very tender and easily mashed with a fork.**
**You may need to add more stock if everything dries up and your cauliflower is not yet cooked through. Keep an eye on things as it cooks to see if you need to add some more.
3. Once cauliflower is tender and cooked through, pour off any excess stock that remains and reserve.
4. Pour all contents into a food processor and mix. If the cauliflower seems too dry, add in some of the reserved stock.

Made it Monday; Fresh Apple Cake

Im not keen on cooking but when I saw this recipe on Pinterest and it was only 3 ingredients, how hard could it be??
Fresh Apple Cake

Ingredients:
Fresh Fruit, sliced if large
Package yellow cake mix
Stick of butter

Layer your apple slices (or other fruit) at the bottom of a pan that has been coated with non-stick spray.

Sprinkle on boxed cake mix.

I didn't even use the entire box -- save a little if you please, and then you can use it to make single-serving versions of this same recipe when you get a sweet tooth!
Melt an entire stick of butter 
Pour butter over the fruit and dry cake mix.


Edit: Usually, I've found that the butter and the moisture from the fruit is enough to soak into the dry mix and create a nice cooked crust.  If, however, when cooking, you find that some of your cake mix still looks powdery, you can try sprinkling a few tablespoons of water over those areas to ensure thorough cooking.  You could also do this preemtively at this point when you've poured the butter over the dry cake mix.
Bake at 350* for approximately 35-45 minutes -- it's done when it is nice and bubbly.
